Chef Lawrence Guevara
According to one of my favorite movies, with great power comes great responsibility.
This saying can also be applied in becoming a leader but with additional strong commitment. In my years of work experience, life has taught me to be bold, work under pressure, and maintain proper communication to people. I realized that I needed to grow outside my comfort zone and continue to adapt, learn, and progress to the ever-
changing environment.
During college, I joined Les Jeunes Chefs Organization Lyceum if the Philippines University – Manila. This helped me improve my set of skills and explore my other talent in baking.
In 2016, I participated in my first competition in Sugar Pastry Showpiece and landed with a bronze medal. After a year, I also took part in a Pastry Category competition in Hofex and finished again with a bronze medal. I always thought I would become a pastry chef, however, I surprised myself when I worked in a bakery and was assigned to making bread. The process of making breads were new to me, nevertheless, I started to love my craft and eventually joined up as an apprentice of Mr. Kris Tan, a world bread Champion.
In the same year, I worked in the bakery commissary of Vikings Group. As my skills were growing, my mentor recommended me to lead a bread gallery in Alabang. Earlier this year, I was asked to lead again as a head baker in Tsuiteru Bread and Dessert Bar in Manila. However, due to the ongoing pandemic, I needed to quit my job. As I return to the province, I plan on starting my own kitchen and hopefully it would become of the breakthroughs in my career.
